Two-Ingredient Oatmeal Cookies

Prepare to be bedazzled by this great recipe, courtesy of the wonderful folks at The Burlap Bag. Made with only bananas and oatmeal, these cookies are quick, healthy, ready in minutes, and perfectly suited to a busy people on a budget. Perfect fodder for my very first post!

Ingredients

1 cup of quick oats
2 large bananas (use overripe for best results)

That's it! 

Directions

1) Preheat oven to 350 degrees, and grease a large cookie sheet.

2) Mix together bananas and oats, forming a gooey dough.

3) Now is the time to get creative: these cookies are tasty on their own, but you can add whatever you find floating around your pantry. Some of my favourite add-ins were:

  • 1/2 cup of chocolate chips
  • 2 tbsp of natural peanut butter
  • 1/3 crushed walnuts, peanuts, almonds
  • 1/2 of raisins
  • cinnamon
  • nutmeg
  • garnished with sunflower seeds
So go wild, young foodies! And let me know how you spiced up your own oatmeal cookies. One word to the wise: don't add too many extras to a single batch, as the cookies may have a hard time sticking together.

4) Scoop onto the greased baking sheet, leaving a bit of room for the cookies to expand. With this recipe, I managed to make 16 rather small oatmeal cookies, but slightly bigger cookies should yield the same tasty result.

5) Bake in preheated oven for 15 minutes. When the cookies' edges begin to brown, remove and let cool for 5 minutes, then transfer to wire rack to cool completely.

Enjoy these delicious treats with breakfast, as a snack, or for dessert! After-all, they're not only vegan, but free of processed sugar, wheat (although most oats are NOT gluten-free), and preservatives. So go nuts! Bake them with love and eat them with pride.
