Where would I be without my library of cookbooks? McDonalds (gasp!) most likely. Listed here is everything from recipe books to nutritional manuals, and each one represents a nugget of know-how that no vegan should be without.
1) The Food Substitutions Bible by David Joachim. It is no coincidence that I put this first on my list... Buy this book! It features an alphabetical catalogue of conventional cooking ingredients alongside their possible substitutes, and warns against potential changes in taste, consistency, and ratio. Not only is this practical for making vegan substitutions (eggs, dairy, honey, etc.), but it makes the perfect companion for the budget-wise chef, allowing you to substitute rare, expensive items for ingredients you can find in your pantry. There is no end to good things I can say about this book, other than it is the envy of all my friends and the most precious resource in my library.
